Bacon Fried Quinoa

Bacon and vegetables combine with sesame oil and coconut aminos to make an easy and delicious fried quinoa, a play on fried rice, in about 10 minutes.
  • 1 c cooked quinoa, any variety
  • 2 c fresh or frozen vegetables of choice (I used green beans, broccoli, and bell peppers)
  • 4 slices of bacon, sliced in ½" pieces (sugar-free if available)
  • ¼" fresh ginger root, minced
  • 1 clove garlic, minced
  • 1 t toasted sesame oil
  • 3 T coconut aminos (sub soy sauce or tamari as preferred)
  • Parsley, chives, and/or cilantro to garnish.
  1. Add the bacon pieces to a large skillet. Head to medium, and cook the bacon until it is crispy. Remove the pieces of bacon with a slotted spoon and set aside. Add the garlic and ginger to the bacon grease, and sauté until fragrant, about 30 seconds.
  2. Add the vegetables to the pan, and cook until soft, about 5-7 minutes.
  3. Add the quinoa to the vegetables and stir well. Stir in the sesame oil and coconut aminos. Cook for another 2-3 minutes to set the flavors come together.
  4. Serve immediately with fresh herbs to garnish if desired.
