Puff Pastry Pizza Bites

Quick and easy appetizer with only 4 ingredients + your favorite pizza toppings.
  • 1 sheet frozen puff pastry, thawed until ready to use
  • ½ c your favorite pizza or marinara sauce (I like to use homemade marinara)
  • 1 c shredded cheese (I used a combination of mozzarella and fontina)
  • ¼ c parmesan cheese
  • Pizza toppings such as pepperoni, olives, mushroom, ham, pineapple, etc.
  1. Preheat the oven to 400 degrees F.
  2. Roll out puff pastry on a well floured surface. Using a knife or pizza cutter make 4, approximately equal, cuts horizontally and 4 vertically. This should make 25 squares.
  3. Using a shot glass press a circle into each square to form your area for toppings. With a fork, poke the area of puff pastry within the circle 3 or 4 times each. Move the squares to a parchment lined baking sheet, leaving space for them to puff up when baking.
  4. Spoon approximately ½ t of pizza/marinara sauce on each square. Top each square with ½ t shredded cheese. Sprinkle all of the squares with parmesan. Add toppings to fit each square.
  5. Bake the squares for 10 minutes until lightly browned and puffy.
  6. Serve immediately or allow to cool completely and store until ready to serve, then reheat in a 400 degree oven for 2-3 minutes.
