In the heat of summer I am all about easy recipes with fresh local produce. Today I’m excited to share a ridiculously easy seasonal salsa.
This salsa is chunky, fresh, and flavorful with a blend of seasonal summer fruit and vegetables – bright cucumbers and sweet peaches. While I also like a spicy salsa, this one is not that, and is instead really refreshing. It is a great compliment to grilled meat or fish, or to something spicy. I am a big fan of the salsa on top of spicy chipotle black beans tacos, to cool and sweeten the heat from the beans (find my recipe for the beans on my Instagram feed, @the_Mexitalian).
Cucumber peach salsa is great as a topping or completely on it’s own. You can make a big batch and serve it with chips for an appetizer, picnic, or party. I think the salsa tastes even better after it’s sat for a while to allow all the flavors, especially the lime juice, to come together. If you can’t find peaches or they’re already out of season where you live, go ahead and sub any good stone fruit – plums, nectarines, or even cherries if you have a good pitter.

- 1 peach
- 1 medium cucumber
- 3 radishes
- 2T diced red onion
- ¼ c cilantro
- ½ jalapeno (optional)
- Juice of one lime
- ¼ t salt
- Dice the peach, cucumber, radishes, and jalapeño if using.
- Chop the cilantro and mix with the diced ingredients in a medium bowl.
- Add the lime juice and salt.
My mouth is watering looking at these pictures. I love fresh salsa recipes that go past tomatoes and peppers. Will definitely have to try this recipe out.
Looks delightful! I’ve loved pairing cucumber with watermelon for various salads but have never tried pairing it with peach. And in-season peaches are my favorite. Must try!
