Add the vegetables to the pan, and cook until soft, about 5-7 minutes.
Add the quinoa to the vegetables and stir well. Stir in the sesame oil and coconut aminos. Cook for another 2-3 minutes to set the flavors come together.
Serve immediately with fresh herbs to garnish if desired.
